LSBU graduate’s sweet success with healthy cakes

London South Bank University (LSBU) graduate Victoria Walford, founder of healthy baking company 'Victorious Baking', has continued to build on the success of her natural and nourishing lower calorie treats with tasting sessions across London and a new deal to stock her cakes in Cafe Brera.

Victoria studied her Masters in Psychology at LSBU, and started up her company with support from the University's Enterprise Associate Scheme, an initiative which supports LSBU graduates to develop their own product ideas and start their own businesses through a start-up grant, office space, structured learning and mentoring.

While she was studying, Victoria also benefited from LSBU's Entrepreneurship in Action Scheme which gives financial support and office space. 

Victoria has developed products that are made with carefully chosen fresh ingredients to allow allergy sufferers and diabetics to enjoy a sweet treat, and her cakes are also approximately 25 calories each.

Her business has grown rapidly and she has been working with Allergy UK and Jane Plan (weight loss consultants), who have taken Victoria's shortbread nationwide.

Her recent tastings include Chop'd salad bars in Canary Wharf, Leadenhall, Curzon Street and Selfridges, and Cafe Brera is now stocking her cakes in their Canary Wharf, Barons Court and Hammersmith shops.
